Nagano — Japan's Alpine Sake Country

High altitude, crystalline mountain water, and the birthplace of Yeast No.7 — Nagano's sake is defined by its extraordinary natural setting.

Nagano Prefecture, Japan’s most mountainous inland region, sits at the heart of the Japanese Alps. Its sake bears the imprint of this landscape in the most literal way: the water that creates it descends from some of Japan’s highest peaks, filtered through alpine rock over years and decades.

The Alpine Setting

At 700–1000 meters elevation, Nagano’s sake towns experience temperatures that naturally provide the cold fermentation conditions that brewers would otherwise have to create artificially. The Suwa basin, the Matsumoto valley, the Ina valley — each has its own microclimate and water character, producing sake with distinct regional personalities within the broader Nagano style.

Key Areas

Suwa: Home to Masumi (Miyasaka Jozo), from which Kyokai Yeast No.7 was isolated. The Suwa basin’s clear water and highland climate produce fragrant, balanced sake. The presence of Lake Suwa moderates temperature swings.

Matsumoto: Daishinshu and other breweries benefit from water flowing from the Hida mountains. The Matsumoto basin is increasingly popular with urban migrants and has a thriving food culture that supports a sophisticated sake scene.

Ina Valley and Southern Nagano: Less celebrated but worth exploring. Smaller breweries with more idiosyncratic character. The valley’s specific water and rice produce distinctly non-mainstream expressions.

Nagano Sake Rice

Nagano has developed its own sake rice varieties: “Kinmon Nishiki” and “Sankeinishiki” among them. The use of locally bred rice in combination with local water creates a genuine terroir — sake that could not be made identically elsewhere even with perfect replication of the brewing method.

Why Nagano Now

The intersection of craft sake culture, mountain tourism, and urban migration (Nagano cities attract many young professionals from Tokyo) has created a dynamic sake scene. Visiting Matsumoto or Suwa, drinking at local izakayas and sake bars, visiting breweries — this is one of Japan’s most rewarding sake travel experiences.
