About FUDO
"Sake is a product of its land."
Water, rice, climate, and the people who brew it — there is sake that could only have been born in that particular place. The crisp, dry sake of Niigata emerged from the snowmelt waters of the Echigo mountains and the long winters. The soft sake of Fushimi was shaped by Kyoto's gentle water and the delicacy of Kyoto cuisine.
FUDO is a media documenting the relationship between Japanese sake and its terroir. Through brewery profiles, regional guides, pairings, and columns, we explore the question: "Why was this sake born in this land?"
